Cheesy Vegetable Lasagna

Layers of pasta, rich marinara sauce, and a cheesy spinach-ricotta filling. Even meat-eaters will love this hearty vegetarian dinner.

  1. Sauté zucchini, mushrooms, and spinach. Mix with ricotta cheese and egg.
  2. Spread marinara sauce in a baking dish. Layer noodles, ricotta mixture, sauce, and mozzarella.
  3. Repeat layers until the dish is full. Top with parmesan.
  4. Bake covered for 30 minutes, then uncovered for 15 minutes until bubbly.
