Rustic Minestrone Soup

A thick Italian vegetable soup with beans and pasta. It’s a great way to use up seasonal vegetables and parmesan rinds.

  1. Sauté onions, carrots, celery, and zucchini in olive oil.
  2. Add vegetable broth, diced tomatoes, and beans. Simmer.
  3. Add small pasta shells and cook until tender.
  4. Stir in spinach and pesto before serving.
