
A traditional Greek salad (Horiatiki) is a celebration of summer produce. It relies on high-quality tomatoes, crisp cucumbers, and salty feta cheese, without any lettuce filler.
- Wash and chop the tomatoes into large chunks. Slice the cucumbers into half-moons. Thinly slice the red onion.
- Place the vegetables in a large bowl. Add the Kalamata olives.
- Place a large block of feta cheese on top of the salad (or crumble it if preferred).
- In a small jar, shake together extra virgin olive oil, dried oregano, salt, and a splash of red wine vinegar. Pour generously over the salad just before serving.
