Baked Eggplant Parmesan

Breaded eggplant slices baked with marinara and mozzarella. Salting the eggplant beforehand draws out bitterness and excess moisture.

  1. Slice eggplant, salt, and let drain for 30 minutes. Rinse and dry.
  2. Dip slices in egg, then breadcrumbs. Bake or fry until golden.
  3. Layer eggplant, marinara sauce, and mozzarella in a dish.
  4. Bake until bubbly and browned. Top with basil.
