
A great burger starts with the right meat: 80/20 ground chuck is ideal for juiciness. Keep the seasoning simple and let the beef shine.
- Divide the ground beef into equal portions. Gently form into patties without overworking the meat. Make a small indentation in the center of each patty with your thumb to prevent it from puffing up while cooking.
- Season both sides generously with salt and pepper.
- Preheat a grill or cast-iron skillet to high heat. Cook the burgers for 3-4 minutes per side for medium-rare. Don't press down on them!
- Add cheese during the last minute of cooking and cover to melt.
